Most caterers offer "gluten-free options" — but prepare them in shared kitchens with shared fryers and shared utensils. For guests with Celiac disease, this creates serious cross-contact risk. The only truly safe option is a dedicated gluten-free kitchen. That's what we are.
Every practice below is standard operating procedure — not a special accommodation. This is how we operate for every event, every time.
Our entire kitchen has never seen a gram of wheat, barley, or rye. We are not "gluten-friendly" — we are 100% dedicated gluten-free. There is no risk of cross-contamination from shared equipment or surfaces.
Our fryers have never been used to cook anything containing gluten. We fry exclusively in grass-fed beef tallow. For Celiac guests, this is the single most important safety factor in fried food preparation.
We don't bring gluten-containing ingredients onto our premises at all. This eliminates the risk of accidental contamination from ingredient handling, storage, or preparation errors.
