We made the switch to grass-fed beef tallow because it's simply better — better for flavor, better for stability at high heat, and better for guests who care about what goes into their food.
Grass-fed beef tallow has a smoke point of approximately 400°F — ideal for frying. It stays stable at high temperatures without breaking down into harmful compounds the way seed oils do.
Seed oils (canola, soybean, sunflower) are high in polyunsaturated fats that oxidize rapidly when heated. Oxidized oils produce harmful aldehydes and free radicals. Tallow is primarily saturated fat — stable under heat.
Beef tallow produces a distinctly rich, clean flavor that enhances the natural taste of food. Many chefs consider it the gold standard for frying — it's how McDonald's originally cooked their fries before switching to vegetable oil.
Seed oils require extensive industrial processing — bleaching, deodorizing, and chemical extraction. Grass-fed beef tallow is a natural, minimally processed fat with no industrial additives.
Grass-fed beef tallow contains fat-soluble vitamins A, D, E, and K2, as well as conjugated linoleic acid (CLA). It's a nutrient-dense fat that has been used in cooking for centuries.
Many guests with inflammatory conditions, seed oil sensitivities, or those following ancestral diets specifically seek out seed oil free food. We're one of the only food trucks in Utah that can accommodate this need.
